Mirch Chawal is the best way to make use of left over boiled rice from previous nights and is delicious to eat for some very spicy lunch!
Ingredients:
Left-Over Boiled Rice – 2 servings
Red Chilli Powder – to taste
Salt – to taste
Fresh Green Chillies – 1 to 3
Chopped Garlic – 1 table spoon
Water – 1/4 cup
Oil – 1 table spoon
Recipe:
Put 1 table spoon of oil in a medium sized pan and put it to heat. Once the oil is heated, put in 2 servings of left-over boiled rice with 1/4 cup of water, red chilli powder, salt, chopped garlic and freshly chopped green chillies.
Mix all the ingredients and cover the pan with a lid so the rice can absorb the taste in the steam on low heat.
After 5 minutes, take the lid off, turn up the heat to medium-high and stir it until it’s dry.
Serve with mixed pickle of mangos, carrots and chillies, or your favourite salads and chatnis!
